Hooray for sunshine!

Woo hoo!  Woke up this morning to sunshine, finally!  Which means it will be a great day for a photo shoot!

I decided to stay home this morning and let the love nugget get in a good nap so he would be well rested for his pictures.  So since we had some extra time I made him something yummy for breakfast.

Blueberry multigrain pancakes

1 cup of multigrain pancake mix

1/2 cup frozen blueberries defrosted

1/2 cup of water

Heat a non stick pan over and 1/4 cup of batter into pan.  Cook for about 1 minute or 2 on both sides.  Just like his dadda, the love nugget really likes pancakes!  Plus, they are super quick and easy!  Just make sure you get a mulitgrain mix that doesn’t call for an added egg.  The one I have just calls for water and oil but I skip the oil 🙂

For my breakfast I had a delicious peaches and cream green smoothie and an apple-cinnamon oat square. 

Peaches and cream green smoothie

1/2 frozen banana

about 5 frozen peach slices

1 tbsp flaxseed

squirt of agave nectar

handful of swiss chard

handful of spinach

1 cup of almond milk

Blend and enjoy!  Yummy! I didn’t get a chance to take a picture because the batteries were dead and I couldn’t wait to drink it 🙂

While the love nugget enjoyed his pancakes,  I made something I’ve been wanting to try for a few weeks.  One of the few processed things I buy for the love nugget are organic rice cereal puffs.  He loves them and they are a quick snack on the go or at home.  I would rather he have something that is homemade and all natural.  So I had seen this recipe on Food Doodles and thought I could modify it a little to make it love nugget friendly.

Whole Wheat crackers

1 1/4 cup whole wheat flour

1/3 cup of nutritional yeast (see picture below)

1/4 tsp garlic powder

1/2 tsp sea salt

1/4 cup vegetable oil

1/2 cup plus 2 tbsp water

Preheat oven to 350 degrees.  In a mixing bowl or stand mixer, stir together dry ingredients.  Add in vegetable oil and water.  Mix until no flour remains in the bowl.

Remove from bowl and form into a ball.  Knead a few times then seperate into two balls.   Roll each ball out into 1/8 inch round.  Using a pizza cutter, cut into desired size squares.

Place onto a baking sheet and bake for 10-12 minutes turning the baking sheet halfway through.  When finished, remove from oven and from baking sheet to allow cooling.

These might be more suitable for an older child who can eat crackers.   Although the love nugget really enjoyed them and used them sort of as a teething biscuit.  He gummed it and sucked on it without swallowing it for quite some time.

Nutritional Yeast can be purchased at most health food stores.  I bought mine when I was breastfeeding as it supposedly aids in milk production.  It has a nutty flavor and can be added to smoothies, soups, breads, etc.  Here is a link that lists some of its benefits. http://www.livestrong.com/article/263528-what-are-the-benefits-of-nutritional-yeast-flakes/
